Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter, melted
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/2 cup heavy cream
  • 2 tablespoons lavender honey
  • Fresh orange slices and rosemary sprigs for garnish

Instructions:

In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt

In another bowl, whisk the egg and then add the buttermilk, melted butter, orange zest, and chopped rosemary

Mix well

Pour the wet ingredients into the dry ingredients and stir until just combined

Do not overmix; a few lumps are okay

Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or oil

Pour 1/4 cup portions of the pancake batter onto the griddle for each pancake

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides

In a separate bowl, whip the heavy cream until it forms soft peaks

Add the lavender honey and continue whipping until well combined and the cream holds stiff peaks
