Potato Salad with Bacon

A creamy and savory potato salad with the smoky goodness of bacon. Perfect for picnics, barbecues, or as a side dish for any meal.

Ingredients:

  • 4 cups of diced potatoes
  • 6 slices of bacon, cooked and crumbled
  • 1/2 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste

Instructions:

In a pot of salted water, boil the chopped potatoes for ten to twelve minutes, or until they are tender

After draining, allow them to cool

Place the crumbled bacon and the cooled potatoes into a big mixing bowl

Combine mayonnaise, Dijon mustard, chopped fresh parsley, and diced red onion in a separate bowl

To taste, add salt and pepper for seasoning

To ensure that everything is evenly coated, pour the mayonnaise mixture over the potatoes and bacon and gently toss

Before serving, let the potato salad cool in the fridge for at least half an hour

If desired, garnish with extra chopped parsley and bacon bits
