Strawberry Chia Seed Jam



Compared to conventional jam recipes, this homemade Strawberry Chia Seed Jam is a healthier option. It's thickened with wholesome chia seeds and sweetened with honey or maple syrup. This jam is very simple to make and tastes great with the addition of vanilla extract and lemon juice.

Ingredients:

  • 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup maple syrup or honey
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions:

In a medium saucepan, combine the chopped strawberries and maple syrup or honey over medium heat

Stir occasionally and let the mixture simmer for about 5-7 minutes, until the strawberries break down and become soft

Remove the saucepan from heat and mash the strawberries with a fork or potato masher to your desired consistency

Stir in the chia seeds, lemon juice, and vanilla extract

Mix well

Allow the mixture to cool for 10-15 minutes, stirring occasionally

The chia seeds will absorb some liquid and thicken the jam

Transfer the jam to a clean glass jar or container and let it cool to room temperature

Once cooled, seal the jar and refrigerate for at least 2-3 hours or overnight to allow the jam to set

Enjoy your homemade strawberry chia seed jam on toast, yogurt, or as a topping for various dishes!
