Ingredients:
- 2 cups fresh strawberries, hulled and chopped
- 1/4 cup maple syrup or honey
- 2 tablespoons chia seeds
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions:
In a medium saucepan, combine the chopped strawberries and maple syrup or honey over medium heat
Stir occasionally and let the mixture simmer for about 5-7 minutes, until the strawberries break down and become soft
Remove the saucepan from heat and mash the strawberries with a fork or potato masher to your desired consistency
Stir in the chia seeds, lemon juice, and vanilla extract
Mix well
Allow the mixture to cool for 10-15 minutes, stirring occasionally
The chia seeds will absorb some liquid and thicken the jam
Transfer the jam to a clean glass jar or container and let it cool to room temperature
Once cooled, seal the jar and refrigerate for at least 2-3 hours or overnight to allow the jam to set
