Taco Stuffed Sweet Potatoes



These Taco Stuffed Sweet Potatoes are a healthy and flavorful twist on traditional tacos. Packed with protein, fiber, and vitamins, they make for a satisfying and nutritious dinner option. Plus, they're easy to make and customizable with your favorite toppings!

Ingredients:

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Sour cream, for serving optional

Instructions:

Preheat the oven to 400F 200C

Poke the sweet potatoes several times with a fork, then place them on a baking sheet

Bake for 45-60 minutes, or until tender

In a large skillet, heat olive oil over medium heat

Add onion, garlic, and bell pepper, saut until softened

Add ground turkey to the skillet, breaking it apart with a spatula

Cook until browned

Stir in taco seasoning, black beans, and corn

Cook for an additional 5 minutes

Once the sweet potatoes are cooked, slice them open lengthwise

Fluff the insides with a fork

Divide the turkey mixture evenly among the sweet potatoes, stuffing them generously

Top each stuffed sweet potato with shredded cheddar cheese

Return the stuffed sweet potatoes to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly

Garnish with fresh cilantro and serve with sour cream if desired
