These Vegan Avocado Sushi Rolls are great for dinner parties because they have a great mix of avocado, cucumber, and carrot. The avocado is creamy, the cucumber is crunchy, and the carrot is sweet. Not only do they look good, but they taste great and are easy to make too!
Ingredients:
- 2 cups sushi rice
- 4 nori seaweed sheets
- 1 avocado, thinly sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- Soy sauce and wasabi, for serving
Instructions:
Rinse sushi rice until water runs clear
Cook rice according to package instructions
In a small saucepan, heat rice vinegar, sugar, and salt until dissolved
Mix with cooked rice while still hot
Place a nori sheet on a bamboo sushi mat
Spread a thin layer of rice over the nori, leaving a 1-inch border at the top
Arrange avocado slices, cucumber, and carrot along the center of the rice
Roll the sushi tightly using the bamboo mat, sealing the edge with water
Repeat with remaining ingredients
Slice each roll into 6-8 pieces using a sharp knife
Serve with soy sauce and wasabi
