Brown Rice Salad



This dish of colorful flavors and textures, brown rice salad, is both nourishing and refreshing. The zesty basil vinaigrette adds a burst of freshness, and the olives, bell peppers, peas, and basil combine to create a delightful harmony. It's excellent on its own as a light meal or as a side dish.

Ingredients:

  • 2 cups cooked brown rice
  • 1/2 cup sliced olives
  • 1/2 cup diced bell peppers
  • 1/2 cup peas
  • 1/4 cup chopped fresh basil
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

Cooked brown rice, diced bell peppers, chopped fresh basil, sliced olives, and peas should all be combined in a big bowl

To make the vinaigrette, combine the olive oil, red wine vinegar, minced garlic, salt, and pepper in a small bowl

After adding the vinaigrette to the rice mixture, gently toss to mix

To allow the flavors to mingle, refrigerate for a minimum of half an hour before serving

Enjoy and serve cold!
